Pineapple Chia Pudding

A Dessert for breakfast, when fresh pineapple in season. Another recipe to try for.

INGREDIENTS: THE PUDDING 

  • 3 Tbsp chia seeds
  • 1 cup plain milk (or soy milk or any other plant-based milk of your choice)
  • 1 tsp of Vanilla extract.
  • 1/8 tsp cinnamon
  • 2 tsp of honey or maple syrup
  • Few pieces of pineapple slices

INGREDIENTS: TOPPINGS

  • Few Slices of Pineapple
  • Few raisins
  • Some coconut flakes

DIRECTIONS

1.Put all the pudding ingredients in a bowl or jar and stir to combine.

2.Cover and let it sit in the fridge for 2-3 hrs or until the chia seeds forms the jelly like consistency. ( Best kept for overnight).

3.Before serving stir well and serve with the toppings as you like (mine was pineapple slices, few raisins, and coconut flakes).

NOTES

1. Feel free to use your own toppings as you desired.

2. It can be an easy go-to breakfast if you make it the night before. So no wasting time in the busy mornings.
